Handle possible classtype values in eieio-persistent-read

* lisp/emacs-lisp/eieio-base.el (eieio-persistent-validate/fix-slot-value):
  The function `eieio-persistent-slot-type-is-class-p' could return
  either a single class, or a list of classes.
